Meatball Marinara Pasta: Vegan Italian Night

It’s Monday! && Monday’s I need something easy!
I always tend to grab a plant based brand of frozen prepared ”meat” like Gardein‘s.
I grabbed a ”meatless meatball” from Gardein’s.
A penne pasta made of yellow lentils from Good & Gather!
&& an organic marinara sauce made with olive oil, basil and garlic.
I found these items at my local Target.
I simply added my noodles to an already boiled pot of water , garlic, avocado oil, pepper & sea salt.
Boiled until noodles are tender.
Poured the jar of marinara sauce into a pan to simmer.
Chopped up onion, garlic, peppers and added to a sizzling pan of avocado oil. added cherry tomatoes. Sautéed until my liking and then add the ”meatless meatballs” and sautéed together until golden brown.
I added all together in one pot.
Add vegan cheese, spinach, .. whatever you like! To make it your own!
